The result is surprising, a white with a dry flavor, high alcohol content, with aromas of dried fruit. Intense hints of honey and banana stand out strongly on the nose, the taste is buttery, velvety, very long.
It comes from espalier vineyards with a density of 3,400 plants per hectare. The vines are more than nine years old. Fermentation takes place at a controlled temperature (15 - 16 °). Bottling takes place one year after being in the tank. The variety is 100% Insolia.
The alcohol content is almost 14.5 °
As for the Limpiados, this white from insolia is also the result of a slight over-ripening of the grapes in the field.
The result is simply fantastic.
It expresses hints of acacia honey, banana and pears, despite being a dry wine.
The golden yellow color and density are out of the ordinary.
The taste is buttery, warm, enveloping and velvety giving further retro olfactory sensations.
Fermentation takes place in a gradual manner, with successive additions of increasingly withered grapes.
This process guarantees a regular transformation of sugars into alcohol up to 14.5% vol. preserving and varying the aromatic range of the product.
Pairing: loves refined cuisine, with a strong and fatty flavor. Ideal with aged or aromatic cheeses
