Don Totò red

DON TOTO 'ROSSO comes from espalier vineyards with a density of 3400 plants per hectare. Pruning is done in gujot.

100% Nero d'Avola high in barriques.
It is a strong, imposing, decisive, generous wine, destined to leave its mark as well as the character, the founder of the family, from which it takes its name and the effigy of the label. The wine is elegant, complex, full-bodied on the palate with unmistakable color and aromas.
The aging in barriques never overwhelms the personality of the Nero d'Avola in purity.

I wanted to dedicate this wine to my ancestor Salvatore, “Don Totò”, who in addition to being the founder of the company and a brilliant entrepreneur, was a source of pride and inspiration for me.
Following his noble and far-sighted example, I wanted to keep up the good name of the family, making use of everything that he has been handed down to me in terms of knowledge of the territory and respect for traditions.
Like him, I dedicate all my time to achieving the excellence of what I produce, trying to pass on all the experience acquired in the field to those in the family who will continue to share and pursue these objectives.

Pairing: roasts and fatty meats, very savory and aromatic cheeses
