100% Nero D'Avola naturally sweet from overripe grapes. Naturally sweet wine, the result of a delicate drying of the best Nero d'Avola grapes selected in the estate's vineyards.
In the first attack it leaves you astonished, releasing hints of morello cherries, dried figs, red fruit jams and spices.
In the glass it is possible to appreciate its clearly unique clarity and "weight".
The taste is immense, full-bodied, enveloping and engaging.
It offers emotions never experienced in an oenological environment thanks to a perfectly balanced dessert with a soft and powerful tannin.
Ideal to combine with 70% black fondant.
The grapes are marked and left to overripe on the plant for about ten days, after which they are harvested and placed on racks.
The bunches are turned upside down every two days in order to optimize the drying.
Fermentation takes place in steel for a period of not less than three months, stopping naturally at around 13.5 %vol . with 100g / l of unsweetened sugars.
Particularity: the grapes that give rise to NIKAO are raised, harvested, processed and vinified according to the "Greek manual skill". After long and careful studies of ancient texts and countless checks "in the field", in fact, the Producer believes he has identified the production method of the ancient Greeks, who chose these same lands (the Campi Geloi which included today's plain and part of the Licata hill) to give life to those wines that made it rich and prosperous.
