Blanche or white beer, known by the Flemish term Witbier, is native to northern Europe and, precisely, refers to the Flemish beer tradition of Belgium and northern France. The peculiarity of this beer is that not only barley malt is used, but also soft wheat (wheat). It is also characterized by a typically cloudy appearance, caused by the presence of yeast and wheat proteins in suspension. It has the classic very cloudy opalescent color and a white and creamy foam. On the nose the typical aromas of wheat and citrus are enhanced, on the palate it is very drinkable, with spicy notes that converge in a citrus and slightly acidic finish.
It can be paired with fish-based dishes, including fried dishes, salads, light cold cuts and white meats.
