After cooking, the mackerel is cooled and, manually, we proceed to a meticulous peeling and the elimination of the thorns. The cleaned slices are then blended in a cutter together with oil, parsley, tomato sauce, vinegar, sugar, capers and chilli until a homogeneous product is obtained.
