After cooking the tuna is cooled and, manually, we proceed to a meticulous skinning and the elimination of the bones. The cleaned slices are then blended in a cutter together with smoked swordfish, olive oil, lemon juice and salt until a homogeneous product is obtained. The product has no added starch and is therefore free from gluten sources.
