The “Astrattu” is nothing more than the Siccagno Tomato Concentrate, hand-picked in our fields in Valledolmo. The modern processing of the siccagno has replaced an ancient technique, the one in which the tomato was split and spread out in the sun on wooden boards. For this reason, in the towns of the Madonie it is common to come across «abstrattu stinnutu au sule». In other words, tomatoes stretched out in the sun.
