To brighten up your weekend we offer you a pasta that combines the freshness of aubergine with the consistency of sausage.

For our pasta with aubergines and sausage it will be necessary: brown the sausage in a pan with a good olive oil while, in another pan with oil, we will sauté the aubergines deprived of their oil and cut into cubes. After combining the two condiments and cooking the pasta al dente, we will whisk it in a pan with the help of a little cooking water and plenty of Parmesan cheese.
