Preparation
To make the white fig jam tart with orange blossom honey and almonds, start with the preparation of the shortcrust pastry that you can easily make in advance, freeze and defrost if necessary or buy ready-made.

Don't be intimidated because the procedure for preparing the shortcrust pastry at home is very simple!

Put the flour, a pinch of salt and the butter into small pieces just removed from the fridge in a blender. Blend everything until you get a sandy-looking mixture; add the sugar, the lemon zest to flavor the dough. Then pour in the egg yolks and mix quickly until the dough is compact and elastic. Form the dough into a ball, wrap it in cling film and put it to rest in the fridge for at least half an hour.

Take a tart mold, brush the bottom with butter and flour it. After 30 minutes, take the shortcrust pastry back and place it on a cold and floured shelf. With the help of a rolling pin, roll out the pastry to a thickness of about 3-4mm and place it on your previously greased and floured mold.

Eliminate the excess dough, which you can use to creatively decorate your tart, prick the bottom with a fork and pour over the jam, leveling with a spoon.

For a golden color, brush the pastry with egg and bake in a preheated oven at 180 degrees for about 45 minutes. When the tart is golden, take it out of the oven and let it cool in the pan. Once it has cooled, remove it from the mold, serve it on a serving dish.
