Squid stuffed with ricotta and walnut pesto

8 medium squid
Packet of walnut pesto
Cow or sheep ricotta
Chives
Orange peel
Pecorino cheese
Salt and black pepper to taste
Lettuce
Pitted black olives

Preparation
Appreciated since ancient times, squid was a widely used ingredient in classical Greece. Rich in mineral salts such as calcium and phosphorus, squid also has a good protein and vitamin ratio; it is low in cholesterol and calories.

For a quick and easy child-proof recipe: clean the squid very well, make side incisions, season with salt, black pepper and a drizzle of oil, lightly searing them on a hot plate.

Separately, prepare a mixture with sifted ricotta - sheep or cow -, chives, salt, grated orange peel and walnut pesto.

Put the mixture in a pastry bag and fill the squid up to halfway. Bake for 5 minutes at 180 ° C in a preheated oven.

Serve by placing the squid on lettuce, pitted black olives and pecorino flakes.
