Sfinci of San Giuseppe

• Flour 300 gr
• Butter 200 gr
• Water 500 gr
• 7 eggs
• Extra virgin olive oil

Ingredients for the filling
• Dark Modica Black Chocolate 80 gr
• Ricotta 500 gr
• Granulated sugar 200 gr

Preparation
In the houses of the devotees, altars are set up on which the food prepared by the community is arranged: sardines a beccafico, broccoli, cannoli and precisely the sfinci.

Today, all the food collected is given to the neediest families in the city. The recipe is simple: sift the ricotta and work it in a bowl with the sugar, using a planetary mixer or an electric whisk to obtain a smooth cream. Add the Modica Dark Black chocolate flakes and place in the fridge, protecting the bowl with a little cling film.

Separately, bring a saucepan with water, butter and a pinch of salt to the boil. Remove from the heat, add the sifted flour and mix vigorously to avoid the formation of lumps. Put everything back on the low heat, continuing to stir until the dough has detached from the sides of the pot.

Let it all cool on a tray and then place it in a planetary mixer adding and mixing, one by one, the eggs.

Fry the sfinci in abundant extra virgin olive oil and dry them on absorbent paper.

Stuff the sfinci with the ricotta filling, sprinkle with powdered sugar or chopped pistachios and serve warm.
